1½ lbs fresh broccoli
Cooking spray
¼ cup red bell pepper, chopped
¼ cup chopped onion
1 Tablespoon margarine
2 teaspoons flour
3/4 cups skim milk
2 oz. light processed cream cheese
¼ cup grated parmesan
¼ teaspoon garlic powderRecipe
Steam broccoli under tender-crisp.
In a skillet, sprayed with cooking spray, over medium-high heat, cook the peppers and onion under tender. Remove from pan and set aside.
Melt margarine in pan. Stir in the flour. Gradually add the milk, and then the cream cheese, parmesan and garlic powder. Stir and heat until thickened. Add the pepper and the onions back to the pan. Heat thoroughly. Spoon over steamed broccoli.
