    1 head of garlic
    Olive oil - Extra Virgin!!!
    Butter
    Eggplant, 2 medium
    Mushrooms, optional

    Peel the garlic and chop in mini-chopper.

    Pour enough olive oil in a super large frying pan to cover bottom for about 1/8". (That's a lot and you may need more later.)

    Sauté garlic in oil until it starts to burn.

    Meanwhile peel eggplants and cut into bite-sized cubes. When garlic is starting to burn add the eggplant to the garlic. It will soak up the oil very quickly. Add about 1/4 pound of butter to mixture. (Yes, it's rather greasy but it is wonderful.) Cook until the eggplant is browned all over and starting to crisp. If necessary, add additional olive oil.

    Serves 8-10

    Just before serving add cut up fresh mushrooms and sauté for about 1 minute.
