    3/4 cup pecans, chopped
    3 Tablespoons butter
    2 Tablespoons Maple syrup
    2 medium shallots, minced
    ½ teaspoon grated orange zest
    1/3 cup freshly squeezed orange juice
    pinch of cayenne pepper
    2 teaspoons flour
    1½ lbs green beans, ends removed
    2/3 cup chicken broth
    1 teaspoon minced sage leaves (fresh)
    ground black pepper to taste

    Toast pecans in a skillet over medium-high heat, stirring occasionally, for about 3 minutes. Remove from heat. Stir in 1 Tablespoon of the butter, and the maple syrup. Return skillet to heat, cook, stirring constantly for about 45 seconds, or until the nuts are dry and glossy. Transfer to plate and set aside.

    Heat the remaining 2 Tablespoons of butter in skillet. Add shallots, orange zest, and cayenne, cook, for about 2 minutes, until shallots are soft. Stir in the flour. Toss in the green beans. Add chicken and orange juice, cover and cook for about 4 minutes, until the beans are tender-crisp. Uncover and cook, stirring occasionally until sauce has slightly thickened, about 4 minutes. Remove from heat, adjust seasonings. Sprinkle with pecans and serve.
