    4 servings (1 pepper and 5 TBS sauce)

    List of Ingredients




    1/3 c white rice with tomato and basil (e.g. Uncle Ben's Tomato-Basil Rice)
    4 sm red bell peppers
    10 oz extra lean beef(7% or less fat)
    1 1/2 c 100% vegetable juice
    3 TBS grated parmesan cheese
    1/2 tsp salt
    1/4 tsp freshlt grated pepper

    Recipe



    Cooking rice according to pkg directions, omitting the butter or vegetable oil. Cool 10 mins. Meanwhile with sharp knife slice off top 1-in of each pepper and remove the seeds. Set aside. Combine rice, the ground beef, 1/4 c of vegetables juice, the parmesan cheese, salt and pepper in a med bowl. Spoon the rice mixture evenly into the peppers. Place the peppers in a 3-qt sauce pan. Pour the remaining 1 1/4 c vegetable juice around the peppers and set the pan over med-high heat. Bring the juice to a boil; reduce the heat, cover and simmer until the peppers are tender and the beef is cooked through, about 20-25 mins. Place each pepper in a serving bowl and serve with the sauce.
