2/3 c Simply Potato (Southwest Style)
1/4 c Southwest Egg Beater
1/4 sm carrot, shredded
1/4 sm zuchinni, shredded
salt, pepper, and garlic powder to tasteRecipe
Spray small pan with cooking spray. Add veggies and saute, then add potatoes, brown, last add the egg beater and cover. Turn once and serve.
