3/4 c low-fat cottage cheese
3/4 c fat-free cottage cheese
3/4 c canned corn
3/4 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 can (4 oz) diced green chilies, drained
2 c med-heat salsa
8 corn tortillas
1 can (16 oz) fat-free refried beans
1/4 c low-fat cheddar cheeseRecipe
In a med bowl, mix cottage cheeses, corn, garlic powder, chili powder, and diced chilies and set aside. On the bottom of a 9x9-in nonstick baking pan, spread 1 c salsa. Place4 tortillas evenly over the salsa. Placethe beans evenly over the tortillas. Place 4 tortillas evenly over the beans. Spread the cheese mixture evenly over tortillas. Over tha cheese mixture, spread the last cup of salsa. Sprinkle the low-fat cheddar cheese evenly over the top. Cover the pan with foil and bake in oven 40 mins at 350*F. Remove cover and let rest 5-10 mins before slicing.
