    Mexican Casserole

    List of Ingredients

    10-6" fat free tortillas, halved
    3 c cooked cubed chicken
    1 c frozen corn
    1 onion chopped
    1/2 green pepper, chopped
    1 can (14 1/2oz) stewed tomatoes
    1-10 oz can diced tomatoes and green chilies
    1 c shredded reduced fat cheese

    Recipe

    Preheat oven to 350*F. Spray 9x13 pan. Line pan with half the tortillas. Layer chicken, corn, onion, pepper and stewed tomatoes. Cover with remaining tortillas. Pour tomatoes and green chilies over top. Cover with foil and bake until heated through-30 minutes. Uncover and sprinkle with cheese. Bake uncovered until cheese is melted, about 10 min. longer.

    Can serve with fat free sour cream and salsa.
