1 c low-sodium chicken broth
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can red kidney beans, rinsed and drained
3/4 c mild salsa
2 garlic cloves, minced
1 lb skinless, boneless chicken breast, cut into 2" piecesRecipe
Preheat oven to 350*F. In a 9x13 baking pan, combine the broth, beans, salsa and garlic. Add chicken and baste with some of the liquid. Bake, stirring once, until the chicken is cooked through and the liquid is reduced, about 45 mins.
