    4 servings (2 1/2c chicken mixture and 1/2 c rice)

    List of Ingredients




    2 c shiitake mushrooms, sliced
    1 c onions, chopped
    1/2 c celery chopped
    1 med garlic cloves, minced
    1 lbs skinless chicken thighs, trimmed of all fat and cut into bite size pieces
    1 TBS all-purpose flour
    1/4 c fat-free chicken broth
    1 1/2 tsp curry powder
    1 tsp salt
    1/4 tsp black pepper
    1/4 tsp paprika
    3 c canned crushed tomatoes
    1/4 c golden seedless raisins
    2 c cooked brown rice

    Recipe



    Coat a large skillet with cooking spray. Add mushrooms, onions, celery and garlic and saute until vegetables are tender, about 5 mins. Place vegetables in slow cooker; add chicken. In a cup, stir together flour and chicken broth until smooth. Add to slow cooker. Add curry powder, salt, pepper, paprika, crushed tomatoes and raisins, and stir in. Cover and cook on low for 5 hrs. To serve, spoon 1/2 c rice onto each of 4 plates. Top each with chicken and sauce and serve.
