    4 servings(about 1 c chicken and sauce and 1/2 c rice)

    List of Ingredients




    3/4 c canned chicken broth, reduced-sodium
    2 TBS cornstarch
    2 TBS sugar
    2 TBS low-sodium soy sauce
    1 TBS white wine vinegar
    1/2 tsp ground ginger
    2 tsp peanut oil
    2 med scallions, chopped
    2 med garlic cloves, minced
    1/2 tsp red pepper flakes, or 1 dried chili pepper, minced
    1 lbs uncooked chicken breast, boneless and skinless, cut into 2-in pieces
    2 c cooked white rice, kept hot

    Recipe



    In med bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside. Heat oil in a wok or large skillet over med-high heat. Add scallions, garlic and pepper and cook 2 mins. Add chicken and cook until browned all over, about 5 mins. Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 mins. Serve chicken and sauce over rice.
