Red Snapper w/ Spanish Sofrito Sauce

1 spray cooking spray
1 lbs snapper fillets, 4 4-oz pieces
2 tsp olive oil
1 lrg onion, chopped (about 1 1/2 c)
1 lrg green pepper, chopped (about 1 c)
1 sm sweet red pepper, chopped (about 3/4 c)
4 med garlic cloves, chopped (about 4 TBS)
1/4 c water
1/2 tsp salt
1/4 tsp black pepper, freshly ground
2 TBS parsley, fresh, chopped (for garnish)Recipe
Coat a lrg nonstick skillet with cooking spray and place over med-high heat. Saute snapper untilfish flakes easily with a fork, about 3 mins per side. Remove fish from skillet; set aside and keep warm. Heat oil in same skillet. Add onion and peppers and cook, stirring and shaking pan, until vegetables are quite soft, wilted and browned, about 7 mins. Add garlic and cook 2-3 mins more. Add water and scrape bottom of pan with spoon to release browned bits. Season with salt and pepper and serve over fish; garnish with parsley.
