List of Ingredients
1 lb shrimp
1 med scallion
1 slice Weight Watchers 100% whole wheat bread
1 tsp dijon mustard
1 egg
1 egg white
1/4 c fat free mayonnaise
1/4 tsp salt
1/4 tsp pepper
8 fillet flounder
Recipe
Pre heat oven to 400. Cook shrimp, cool and peel and chop. Chop scallion (white and green). Toast bread and cut into very small pieces. Mix all ingredients except flounder. Divide mixture up evenly between 8 pieces of flounder. Roll fish and secure with tooth pick. Bake about 10 mins. or until fish flakes.
