1 lbs pork loin, lean and fat
1 1/4 oz taco seasoning
16 oz salsa, hot
8 oz low-sugar apricot preserves
4 c cooked white riceRecipe
Cut meat into small cubes and brown in nonstick skillet, about 10 mins. Add taco seasoning mix, salsa and preserves. Simmer about 5 mins. Mix in cooked rice and heat through.
