    3 c cooked brown rice
    1/2 c sliced fresh mushrooms
    1/2 c shredded carrots
    1/4 c sliced green onions
    1/4 tsp ginger
    1 garlic clove, minced
    2 TBS lite soy sauce
    2 eggs, beaten
    1/8 tsp pepper
    3/4 c frozen peas, thawed

    Recipe



    While rice is cooking, spray large wok or skillet with non stick cooking spray. Heat over med. heat until hot. Add mushrooms, carrot, onions, ginger, and garlic; cook and stir 1 min. Reduce heat to low. Stir in cooked rice and soy sauce. Cook 5 mins., stirring occasionally. Push rice to side of pan, pour eggs and pepper on other side. Cook over low, stirring constantly until eggs are done. Add peas to egg mixture and stir contents of wok together and cook until thoroughly heated.
