4 c mixed lettuce leaves
1 c snow peas, trimmed
1 c cherry tomatoes
1 c yellow pear-shaped tomatoes
3/4 c celery,sliced
1/4 c shallots, chopped
cajun seasoning to taste
10 oz skinless chicken breast
2 TBS fat-free dressingRecipe
Place the lettuce in a serving dish and top it with the vegetables; set aside. Sprinkle cajun seasoning over chicken and broil, grill or barbecue it until cooked. Slice the chicken into thin strips. Arrange the warm chicken over the salad and drizzle with the dressing.
