    List of Ingredients




    3/4 c onions, chopped
    1 1/2 c cooked chicken breast, diced
    5 oz canned pinto beans, rinsed and drained
    1/2 c water
    1 1/2 tsp taco seasoning mix
    4 c lettuce, shredded
    2 c fresh tomato, chopped
    1/2 c green bell pepper, chopped
    3/4 c shredded reduced-fat cheddar cheese
    1 1/2 c corn Chex
    3/4 c chunky salsa
    6 TBS fat-free sour cream

    Recipe



    In a lrg saucepan sprayed with cooking spray, brown onion. Stir in chicken, pinto beans, water, and taco seasoning. Mix well to combine. Lower heat. Simmer 10 mins, stirring occasionally. Meanwhile,in a lrg serving bowl, combine lettuce, tomato, and green pepper. Spoon hot chicken mixture over lettuce mixture. Top with cheese and Corn Chex. Toss gently to combine.

    For each serving, place about 2 c mixture on a plate and top with 2 TBS salsa and 1 TBS sour cream.
