2 TBS olive oil
2 TBS wine vinegar
1/2 tsp salt
1/4 tsp pepper
3 cloves garlic, minced
2 (15 oz) cans cannellini beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
2 tomatoes, chopped
1 red onion, chopped
2 c seashell pasta, cooked al denteRecipe
In a cruet or jar with a cover, combine olive oil, vinegar, salt, pepper, and garlic; shake well. In a salad bowl, combine remaining ingredients; pour dressing over top and toss. Chill several hours.
