    Chuncky Clam Chowder

    List of Ingredients

    2 cans chopped clams
    1/2 c water
    2 c diced potatoes
    1/3 c chopped celery
    1/3 c diced onion
    white pepper ( black pepper can be used)
    2 c corn
    2 c skim milk
    3/4 c evaporated skim milk
    1 TSB cornstarch

    Recipe

    Drain claims, reserve juice. Mix water, potatoes, celery, onion, pepper, 1/2c clam juice bring to boil, then simmer for 7 mins. Add corn, simmer 5 mins. Add milk and 1/4c evaporated milk, simmer 5 mins. Remove 1c of soup and blend in blener or food processor. Add it back in. (this thinkens it up). Add clams. Mix 1/4c evaporated milk and the cornstarch, add in stir constantly until thickened.
