Light Cream of Roasted Poblano Soup

1 large onion
5 servings cooking spray
3 c fat-free chicken broth
8 oz 1/3 less-fat cream cheese
3 med poblano chile
1 c fat-free sour creamRecipe
Roast poblano chiles on gas-topped stoveor broiler until blackened. Place chilies in sealed plastic bag for at least 10 mins to allow skin to steam. Using non-stick cooking spray, soften onions until just translucent-do not carmelize. Add chicken broth and bring to a slow simmer over med heat. Melt cream cheese into onion and broth mixture. Remove chiles from bag, peel skin off and remove seeds. Add chiles, onion and cream cheese mixture and sour cream to a blender (may need to be done in two batches depending on size of your blender) and puree until smooth. Serve hot.
