Slow Cooker Hearty Black Bean Soup

1/4 lbs chorizo
1 sm onion, chopped
1 med garlic clove, minced
1 sm sweet red pepper, chopped
1 sm green pepper, chopped
2 TBS dry sherry
1 tsp ground cumin
1 tsp bay leaf, crumbled or i whole bay leaf
15 oz cooked black beans, undrained
15 oz chicken broth, fat-free
1 lime, squeezed
2 TBS cilantro, minced
1/8 tsp salt, or to taste
1/8 tsp black pepper, or to tasteRecipe
Discard chorizo skin. Crumble meat and brown in 12-in nonstick skillet for 2 mins. Add onion, garlic, and peppers. Saute over med-high heat 5 mins. Add to slow cooker. Add sherry, cumin, bay leaf, beans and broth. Cover and cook on low for 4-5 hours. Remove lid. Scoop out 1 c beans and press with back of a fork to mash. Return to pot. Add lime juice, cilantro, salt and pepper. Simmer uncovered just to warm through, about 5 mins.
