List of Ingredients
4 med corn tortillas
1/2 tap garlic salt, divided
1 sm onion, chopped
1 med garlic cloves, minced
2 med tomatoes, cored and chopped
1 avg serrano chili, cored, seeded, and minced(use 1 chili)
1 med yellow pepper, cored and chopped
3 c fat-free chicken broth
2 TBS cilantro, minced
1/4 tsp salt
1/4 tsp black pepperRecipe
Preheat oven to 400*F. Sprinkle each tortilla with 1/8 tsp garlic salt, then cut each into 6 wedges. Place on cookie sheets; bake until crisp, about 8-10 mins. Remove from oven and set aside. In a food processor fitted with a steel blade, combine onion, garlic, tomatoes, chili and pepper. Process until vegetables are finely chopped. Coat a 3-qt pot with cooking spray. Add vegetables; saute until crisp-tender, about 5 mins. Add chicken broth; simmer until vegetables are tender and flavors are blended, about 5 mins. Stir in cilantro, salt and pepper. Spoon soup into 4 bowl. Top each with 1/4 toasted tortillas.
