List of Ingredients
1 cauliflower
1/2 eggplant
2 small potatoes
1 scallion bunch
1/4 c low-fat cheese
1/2 tsp cumin powder
salt to taste
1 tsp olive oilRecipe
Cut cauliflower, potatoes, and eggplant into bite size chinks after washing. Put in a large bowl, then mix in oil, cumin and salt. Lay flat on baking tray and bake for 30-45 mins. at 350-400*F or until soft. Remove from oven, allow to come to room temp., then drizzle with grated cheese. Serve warm or cold with crackers or pita bread, or as a side.
