    Recipe Introduction


    4 servings, 1 1/4 c each

    List of Ingredients




    1 TBS canola oil
    1 c chopped onions (about 1 med)
    1/2 c chooped carrots (about 1 med)
    1/2 c chopped celery (about 1 med)
    1/2 c chopped red peppers
    1 can (14 1/2 oz) fat-free reduced-sodium chicken broth
    1 1/2 c Minute white rice, uncooked
    1 c frozen peas

    Recipe



    Heat oil in nonstick skillet. Add onions, celery, carrots and peppers; cook 5 mins. or until tender. Add broth; bring to boil. Stir in rice and peas; cover. Simmer 5 mins. Remove from heat. Let stand 5 mins. before serving.
