Cheddar Cheese Soup
List of Ingredients
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped carrot
- 3 cups chicken or vegetable broth
- 1 tablespoon corn starch
- 2 tablespoons water
- 4 ounces sharp cheddar cheese
- 1 - 10 3/4 ounce can condensed cream of potato soup
- 1 - 8 ounce jar pasteurized process cheese spread
Instructions
- In a large saucepan, combine onion, carrot, celery and broth. Bring to boil, reduce heat, cover and simmer 10 minutes or until tender.**
- In a small bowl combine the water and cornstarch, mix well. Stir into broth mixture. Bring to boil, reduce heat. Add the cheddar cheese and potato soup and cheese spread, whisk until cheese is melted and mixture is well combined. Heat gently. Do not boil.
Final Comments
**At this point, I add the potato soup to the broth mixture and blend for a smoother soup.
