    Crab Cakes

    If you enjoy crabmeat you'll enjoy this Crab Cake recipe.


    List of Ingredients


    • 1 cup Italian-seasoned breadcrumbs
    • 1/3 cup grated Parmesan Cheese
    • 1/4 cup mayonnaise
    • 1 large egg, lightly beaten
    • 2 tbs chopped fresh parsley
    • 1 garlic clove, pressed
    • 2 tsp Old Bay seasoning
    • 1/4 tsp pepper
    • 1 tsp lime juice
    • 1 pound fresh lump crabmeat, drained (canned will do well too)
    • 1/4 cup butter or margarine


    Instructions


    1. Stir together first 9 ingredients; fold in crabmeat. Shape into 8 (3inch) patties.
    2. Melt 2 tablespoons butter in a large skillet over medium heat; cook 4 crab cakes 4 to 5 minutes on each side or until golden. Drain on paper towels. Repeat with remaining 2 tablespoons butter and crab cakes. Yields 8 servings.
