    Sweet-Sour Pork

    List of Ingredients




    2 pounds boneless lean pork, cut into 1-inch cubes
    1 cup water
    6 Whole Cloves

    Sauce

    1/4 cup cornstarch
    1 1/2 cups pineapple juice
    1 cup firmly packed brown sugar
    1/4 cup butter or margarine
    1/4 cup soy sauce
    1/4 cup cider vinegar
    1/2 teaspoon Onion Powder
    1/2 teaspoon Ground Ginger

    2 tablespoons butter or margarine
    1 medium-size green bell pepper, cubed
    1 medium-size carrot, sliced
    1 small onion, sliced
    2 tablespoons cornstarch
    2 tablespoons soy sauce
    1/2 cup vegetable oil or shortening
    Hot cooked rice to serve, if desired


    Recipe



    1. Place meat in large saucepan with water and cloves. Heat to boil, reduce heat,cover, and simmer 25 minutes or until meat is tender. Drain and set aside to cool. Discard whole cloves.

    2. While meat is cooking, prepare sauce. Place 1/4 cup cornstarch in small bowl. Add small amount of pineapple juice and stir until smooth. Place remaining pineapple juice, cornstarch mixture, sugar, 1/4 cup butter, 1/4 cup soy sauce, vinegar, onion powder, and ginger in 3-quart saucepan and cook over low heat, stirring, until thickened. Set aside. (Steps 1 and 2 may be prepared 1 day ahead of time, covered, and refrigerated until ready to complete cooking.)

    3. Melt 2 tablespoons butter in skillet. Sauté green bell pepper, carrot, and onion 2 to 3 minutes, stirring occasionally. Remove from skillet, set aside, and keep
    warm.

    4. Mix 2 tablespoons cornstarch with 2 tablespoons soy sauce until smooth. Pour over cooled pork and toss to coat.

    5. Heat oil in skillet over high heat and cook pork until crisp and browned.

    6. Reheat sauce, if necessary. Combine meat, vegetables, and sauce. Serve over hot cooked rice.
