Special Breast of Chicken
List of Ingredients
3 Chicken Breasts -- skinned & boned
6 Slices Ham (baked or boiled)
6 Slices Swiss Cheese
1 Egg (beaten)
4 Tbs Butter
Salt
Flour
For The Sauce:
1/2 Lb Mushrooms
2 Tbsp Chopped Shallots
1/3 Cup White wine
4 Tomatoes (peeled and chopped)
1 Cup Heavy cream
1 C White sauce
For The White Sauce:
2 tbsp Butter
2 tbsp Flour
1 cup Milk
Recipe
1. Prepare breast of 3 chickens (6 pieces) as follows: trim skin from chicken, remove bone, and separate top filet section from smaller one lying beneath. Flatten each with mallet to same size.
2. Cut ham and cheese to same size as chicken filets. Put top and lower filet section of each piece of breast together with a slice of cheese and a slice of ham between them, moistening them with beaten egg to make them stick together. Salt lightly and let stand in refrigerator until ready to cook. Can be prepared a day ahead.
3. When ready to cook, roll in flour. Brown in melted butter until done. Keep on warmed platter until sauce is prepared.
The Sauce:
1. To pan in which chicken was browned add the mushrooms, shallots and wine. Cook until liquid is reduced in half. Add tomatoes and cook briskly until most liquid is gone but tomatoes are not mushy. Add the cream and cook down a little. Add the white sauce and salt to taste. Let come to simmer.
2. Pour over chicken. Garnish with chopped parsley. Serve with peach halves filled with cranberry-orange relish, rice, and hot rolls.
