CAJUN BEANS AND RICE
List of Ingredients
1 lb. beans (red beans, pinto,
or black beans), cooked
8 oz. salt pork or ham hock
1 lb. smoked beef sausage
1/2 lb. smoked ham, cubed
3 c. chopped onions
1 or 2 bunches green onions,
chopped
2 cloves garlic, minced or
chopped thin
1 tsp. salt or to taste
1 c. chopped bell pepper
1 c. chopped parsley
1 can tomatoes
1 (8 oz.) can tomato sauce
1 tsp. cayenne pepper
(optional)
1/4 tsp. oregano
1/4 tsp. thyme
1/8 tsp. Tabasco sauce
1 Tbsp. Worcestershire sauce
instant or rice of your choice
Recipe
To Prepare Beans: Wash, cover with water and bring to
boil. Add pinch of soda, boil hard for 2 minutes. Remove from heat and let stand 1 hour. Bring to boil again. Reduce heat,simmer until beans are tender.
While beans are cooking, mix together all other ingredi-
ents except rice. Fold into beans and stir occasionally until beans are done and a thick gravy has formed. Add more water if necessary. Cook rice at last minute and serve bean mixture over hot rice.
Comment: Canned beans may be used to shorten cooking
time.
