Southern Barbecue Sandwich
List of Ingredients
1 pound boneless sirloin or flank steak*
3/4 cup Worcestershire Sauce, divided
1/2 cup ketchup
1/2 cup light molasses
1/4 cup yellow mustard
2 tablespoons hot sauce
1/2 teaspoon hickory salt (optional)
4 sandwich buns, split
Recipe
Place steak in large resealable plastic food storage bag. Pour 1/2 cup Worcestershire over steak. Seal bag and marinate meat in refrigerator 20 minutes.
To prepare barbecue sauce, combine ketchup, molasses, remaining 1/4 cup Worcestershire, mustard, RedHot Sauce and hickory salt in medium saucepan. Bring to a boil over high heat. Reduce heat to low. Cook 5 minutes until slightly thickened, stirring occasionally. Set aside.
Place steak on grid, discarding marinade. Grill over hot coals 15 minutes, turning once. Remove steak from grid; let stand 5 minutes. Cut steak diagonally into thin slices. Stir meat into barbecue sauce. Cook until heated through, stirring often. Serve steak and sauce in sandwich buns. Garnish as desired.
NOTE: You may substitute 1 pound pork tenderloin for the steak. Cook pork until meat is juicy and barely pink in center or substitute leftover sliced steak for the grilled steak. Stir into sauce and heat through.
