Bean Soup
List of Ingredients
2 cups Northern Beans
8 cups chicken or vegetable stock
1 ham shank
2 onions diced
3 carrots, peeled and diced
3 stalks celery, diced
Salt and pepper to taste
Recipe
Rinse beans and remove any stones. Bring stock to a boil. Add beans and ham shank and simmer until tender, about one hour. When beans are tender, add vegetables and remove ham shank. Peel meat from shank and add to soup. Simmer until vegetables are done. Season with salt and pepper.
