Country Baked Squash
List of Ingredients
2 pounds small yellow squash
1/4 cup water
4 tablespoons Minced Onion
4 tablespoons butter or margarine, melted, divided
1/2 cup milk
2 eggs, beaten
1 teaspoon McCormick® Bon Appétit
1 teaspoon Parsley Flakes
1/4 teaspoon Ground Black Pepper
1/2 cup saltine cracker crumbs
Recipe
1. Wash but don't peel squash. Slice 1/2 inch thick and place in 4-quart saucepan. Add water and minced onion. Heat to boil and cook about 10 minutes or just until tender.
2. Drain squash and place in 11 x 7 x 2-inch baking pan. Pour 2 tablespoons melted butter over squash.
3. Place milk, eggs, Bon Appétit, parsley, and pepper in small bowl. Mix well and pour over squash. Place cracker crumbs in small bowl and stir in remaining 2 tablespoons melted butter. Sprinkle over squash.
4. Bake, uncovered, in 350 F oven 20 minutes.
