Grilled Stuffed Tomatoes
List of Ingredients
4 small tomatoes
3 tablespoons grated parmesan cheese, divided
2 tablespoons chopped parsley, divided
1/8 teaspoon pepper
3 tablespoons seasoned bread crumbs
Recipe
Cut thin slice from stem end of each tomato; remove pulp to form shallow cups. Remove seeds and chop tomato pulp; combine with 2 tablespoons cheese, 1 tablespoon parsley and pepper. Fill tomato cups with mixture. Combine bread crumbs, remaining cheese, and parsley and spoon mixture evenly over filling. Place in disposable foil pan; cover loosely with foil. Cook over medium coals 15 minutes or until heated through. Makes 4 servings.
