Italian Herb Roasted Vegetables
List of Ingredients
6 cups assorted vegetables (such as onion, potatoes, red bell pepper, zucchini) cut in 1-inch pieces
1/4 cup olive oil
1 teaspoon McCormick® Italian Seasoning
1 teaspoon Garlic Powder
1/2 teaspoon Fennel Seed
1/2 teaspoon Oregano Leaves
1/2 teaspoon salt
2 cups chopped Portabello mushrooms
2 cups shredded Mozzarella cheeseRecipe
1. Place vegetables in a large bowl. Mix oil and next 5 ingredients. Pour over vegetables and toss to coat.
2. Spread vegetables in 13x9-inch baking pan. Roast at 450 degrees for 25 minutes. Stir in mushrooms and sprinkle with cheese.
3. Bake 5 minutes or until cheese melts.
