    Coconut Macaroons - Paula Deen's

    Source of Recipe

    Paula Deen's Web site

    Recipe Introduction

These make a gooey-sweet macaroon that's addictive. For a lower-calorie treat, try these which are as good, but not as gooey: http://www.recipecircus.com/recipes/karlenj5/COOKIES/Coconut_Macaroons.html

    List of Ingredients

    3 cups shredded coconut
    2 egg whites, stiffly beaten
    1 teaspoon cream of tartar
    1 teaspoon almond extract
    1/8 teaspoon salt
    2/3 cup sweetened condensed milk

    Recipe

Preheat oven to 350 degrees F. Place the coconut in a medium bowl. Mix in condensed milk to form a thick paste. In mixing bowl beat egg whites. When eggs become stiff, slowly add the cream of tartar, almond extract and salt. Fold egg white mixture into coconut. Drop by teaspoonfuls onto greased or parchment paper lined cookie sheets, about 2 inches apart. Bake for about 8 minutes or until edges are lightly browned.
