    Sweet-Sour Pork

    List of Ingredients

    1 1/2 pounds lean pork, cut i 2x1/2 inch strips
    2 tablespoons olive oil
    1 chicken bouillon cube
    1 20 oz. can pineapple tidbits
    1/4 cup brown sugar
    2 Tablespoons cornstarch
    1/4 cup vinegar
    1 Tablespoon soy sauce
    1 medium green pepper, cut in strips
    1/4 cup thinly sliced onions
    Hot cooked rice

    Recipe

    Brown pork slowly in hot olive oil. Add 1 cup water, bouillon cube, and 1/4 teaspoon salt; mix well. Cover and simmer until tender (about 1 hour) or place in slow cooker to cook on low for 2-6 hours.

    Meanwhile, drain pineapple, reserving syrup. Combine brwon sugar and cornstarch; add reserved pineapple syrup, vinegar, soy sauce, and 1/2 teaspoon salt. Cook and stir over medium high heat till thickened and bubbly.

    Remove from heat. Add sauce to pork; mix well. Stir in pineapple, green pepper, and onion (or add stir-fry veggies of your choice). Cook over low heat 2 to 3 minutes or until veggies are tender crisp. Or, if you prefer and you don't mind veggies well done, you can add all to the pork in a slow cooker and let it stay heated on low until ready to serve.

    Serve over the rice. Makes 6 servings.
