    Hearty Cheese Potato Soup

    Recipe Introduction

    This hearty cheese potato soup can be served as the main course with a salad and bread, as a side dish or as a meal in itself.

    List of Ingredients

    4 slices bacon
    6 potatoes, peeled
    1 onion, chopped
    1 carrot, finely chopped
    1 cup finely chopped celery
    4 cups milk
    2 teaspooons salt
    1 teaspoon black pepper
    1 cup sour cream
    2 Tablespoons flour
    2 teaspoons paprika
    8 oz. shredded cheddar cheese

    Recipe

    In large saucepan cook bacon until crisp; remove bacon and set aside; drain saucepan.

    Add potatoes, onion, carrot and celery to saucepan. Add enough water to cover vegetables. Cook over low heat until tender.

    Stir in milk, salt and pepper. Bring to a boil. Turn heat to low and let simmer while doing the next instructions.

    In a separate bowl stir together sour cream, flour and paprika. Gradually stir 1 cup of hot soup mixture into sour cream mixture.

    Pour sour cream mixture into soup mixture. Cook until small bubbles break the soup's surface. Add the shredded cheddar cheese. Top with chopped bacon pieces.

    Serves 10-12.
