White chocolate Cheese cake

Recipe Introduction
This is a wonderfully light and creamy cake. I get many requests for it.
List of Ingredients
- 3 8 oz softened cream cheese
- 3 large eggs
- 1/2 c. heavy whipping cream
- 1 tsp. vanilla
- 1 bag white chocolate chips
- 1/2 c. sugar
- 2 c. graham cracker crumbs
- 3 tbs. melted good quality butter
- 1/2 c. sugar
Instructions
- Combine graham cracker crumbs with sugar and melted butter. Press into greased springform pan. Refregerate until ready to use.
- Preheat oven to 325.
- In large bowl, mix cream cheese until well blended.
- Add eggs one at a time, mixing well each time.
- Blend in sugar and vanilla.
- Melt white chocolate chips in a bowl in microwave for about 1 minute. Add to cream cheese mixture.
- Pour mixture into prepared pan, and bake for 40 minutes.
- Let rest for 15 minutes. Run a knife along the outside of the crust between the pan.
- Referegerate for at least 8 hours, then remove from pan.
- Slice cake easily by running the blade of a sharp knife under hot water and wiping with a clean towl between each cut.
- Garnish with grated chocolate or any topping of your choice.
