This is great no matter what the season!
List of Ingredients
- 2 C. Chopped baked potato
- 1/2 c. Chopped carrots
- 1/4 c. Chopped sweet onion
- 1/2 c. Chopped clelry
- 2 c. Chicken broth
- 1 tsp. Salt
- 1 stick Unsalted sweet cream butter
- 1/4 c. Flour
- 1 1/2 c. Milk
- 1 c. Heavy whipping cream
- 2 1/2 c. Cheddar cheese
- 1 can Cream style corn
- 1 8 oz pkg. Cream cheese
Instructions
- Bake potatoes @ 400 for about 1 1/2 hrs, or until done. Set aside.
- Saute onion, carrots and celery in 1 tbs butter until soft. Set aside.
- In a heavy skillet, met butter over low heat.
- Add flour, making a rough, and cook for 2 minutes on medium heat until thick, stirring constantly. Simmer 5 minutes.
- Add remaining ingredients, stirring constantly. Simmer for 15 minutes.
- Do not boil.
Final Comments
Great with fresh made honey beer bread. Serves 6.
