    This is great no matter what the season!


    List of Ingredients


    • 2 C. Chopped baked potato
    • 1/2 c. Chopped carrots
    • 1/4 c. Chopped sweet onion
    • 1/2 c. Chopped clelry
    • 2 c. Chicken broth
    • 1 tsp. Salt
    • 1 stick Unsalted sweet cream butter
    • 1/4 c. Flour
    • 1 1/2 c. Milk
    • 1 c. Heavy whipping cream
    • 2 1/2 c. Cheddar cheese
    • 1 can Cream style corn
    • 1 8 oz pkg. Cream cheese


    Instructions


    1. Bake potatoes @ 400 for about 1 1/2 hrs, or until done. Set aside.
    2. Saute onion, carrots and celery in 1 tbs butter until soft. Set aside.
    3. In a heavy skillet, met butter over low heat.
    4. Add flour, making a rough, and cook for 2 minutes on medium heat until thick, stirring constantly. Simmer 5 minutes.
    5. Add remaining ingredients, stirring constantly. Simmer for 15 minutes.
    6. Do not boil.


    Final Comments


    Great with fresh made honey beer bread. Serves 6.
