Crust
3/4 cup finely crushed pretels or nilla wafers
3 tbs sugar
5 tbs melted butter
Mix all together, reserving 2 tbs for garnish.
Filling
1 pack unflavored gelatin 1/4 tsp salt
1 tsp grated lemon peel 5 tbs tequila
7 tbs lemon juice 2 1/2 tbs triple sec
4 egfgf yolks 7 tbs sugar
1/2 cup sugar 1 unpeeled lemon slice Recipe
Soften gelatin in mixture of lemon peel and juice. Beat egg yolks in top of double boiler until very thick. Beat in 1/2 cup sugar and salt. Add gelatin mixture, stirring constantly until slightly thickened and gelatin dissolved. Transfer to bowl and blend in liquors. Chill until cold to touch. Beat egg whites, adding 7 tablespoons sugar until stiff peaks formed. Carefully fold in yolk mixture. Spoon into crust, sprinkle with crumbs and garnish with lemon slices. Chill overnight.
