LUSCIOUS CHOCOLATE PUDDING

2 large eggs, plus 4 yolks.
1 cup sugar.
6 tablespoons unsweetened cocoa powder.
5 tablespoons cornstarch.
1/4 teaspoon salt.
4 cups milk.
8 ounces semisweet chocolate, chopped.
4 tablespoons butter.
2 teaspoons vanilla.

1. Whisk the eggs and yolks together in a mixing bowl.
Combine the sugar, cocoa powder, cornstarch and salt, wisk into the eggs to make
a smooth paste. Set aside.
2. Scald the milk in a heavy saucepan. Whisk 1 cup of the scalded mild into the egg mixture
until smooth; whisking, slowly pour back into the hot milk in the saucepan until
smooth.
3. Place the saucepan over medium heat and cook, whisking constantly, until the mixture
thickens and it's boiling slowly, 7 to 7 minutes. Remove from the heat, whisk in
chopped chocolate, butter and vanilla.
4. Scrapethe pudding into individual serving dishes and cool to room temp. Cover with
plastic wrap (to prevent skin from forming); refrigerate until well chilled.
Serve with whipped cream.
