    Dormitory Thai Dinner

    List of Ingredients

    1/2 cup crunchy peanut butter
    2 tablespoons soy sauce
    1 teaspoon ginger
1 tsp. crushed red pepper flakes
    1/2 tsp cumin
    1/2 cup chicken broth
    3 pkgs ramen noodles, cooked
1 cup frozen broccoli flowerets, steamed but still crisp

    Recipe

In saucepan, melt peanut butter over low heat. Add soy sauce, ginger, pepper flakes, cumin, and broth. Stir and heat until smooth and saucy. Toss over noodles and broccoli to coat. Enjoy. If you can get your hands on some coconut milk to enjoy this with, even the canned kind, so much the better. You could also do this in the microwave on LOW power. Just make sure you stop and stir it a lot so the peanut butter melts rather than "cooks". Feel free to add any vegetables that you want. You could try baby corn, pepper strips, bean sprouts, etc. I just wanted this recipe to be simple so that even a person with a limited amount of cooking space/time (like a college student) would feel comfortable with it.

Note: Many people cook the hell out of ramen noodles and then wonder why they don't like them. To cook them properly, put them into boiling water and boil for no more than 3 minutes. Oh, and throw those stupid little flavoring packets away. They are full of MSG and real foodies don't need flavoring packets anyways.
