Spicy Sweet Pumpkin Seeds

So, it's the day after Halloween and you have pumpkin seeds out the wazoo. A lot of people roast the pumpkin seeds in the oven with a little salt, and then they eat a few but the rest go to waste because let's face it, pumkin seeds are not all that naturally delicious. But this recipe will guarantee that all the pumpkin seeds get eaten. The first step is to roast the seeds in the oven. About 300 degrees for an hour or so until their pretty dry. Then follow the recipe:
List of Ingredients
2 to 3 cups roasted pumpkin seeds
5 tbs. sugar
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. ginger
a pinch of ground cayenne pepper
1 tbs. peanut oil
Recipe
In a small bowl, combine 3 tablespoons sugar, salt, cinnamon, ginger, and cayenne pepper. Heat oil in a large skillet. Add roasted pumpkin seeds and the remaining 2 tablespoons of sugar. Over medium high heat, cook the pumpkin seeds for about 1 minute or until the sugar melts and starts to caramelize. Place pumpkin seeds in a large bowl. Sprinkle with spice mixture and toss to coat. Allow cooling before eating.
