Creamy Cheesy Cauliflower Soup

I love this soup! It is so creamy and filling and it's only 1 point per serving!
List of Ingredients
1 med. onion chopped
2 Tablespoons olive oil
1 med. head cauliflower, broken into flowerets
2 1/2 cups reduced sodium chicken broth
1/2 Cup non-fat milk
4 oz. 2% fat shredded cheddar cheeseRecipe
1. In a large saucepan over medium-high heat, combine onion and oil; cook, stirring, until onion is tender, 3 to 5 minutes. Add cauliflower and cook an additional 2 minutes.
2. Add broth and milk to pan and bring to a boil. Reduce heat and gently simmer, cover pan and cook for 30 minutes or until cauliflower is very tender.
3. In blender, puree soup in small batches. Return to pan over medium heat and add cheese. Whisk until cheese is just melted.
