CHEDDAR, CHIVE, and GARLIC MASHED POTATO

1 lb baby white or red potatoes, scrubbed
8 garlic cloves
1/2 cup reduced-sodium chicken broth
1 cup shredded fat-free cheddar cheese
1/4 cup chopped fresh chives
1/2 tsp black pepper
1/4 tsp salt Recipe
Combine in a medium saucepan the potatoes, garlic, and enough water to cover by 1 inch; cover and bring to a boil. Reduce the heat and simmer, uncovered, until the potatoes are fork-tender, about 15 minutes.
Meanwhile, put the broth in a small microwavable bowl. Microwave on HIGH until hot, 30-60 seconds.
Drain the potatoes and garli. Return to the pan and mash with the broth, cheese, chives, pepper, and salt. Serve at once.
** Leave the skins on the potatoes to minimize prep time. You can mash the potatotes with a long-handled fork, potato masher, or an electric mixer.
