    Cheesy Scrambled Egg Casserole

    1 - 6 oz. package Canadian Bacon, chopped
    1/2 cup chopped onion
    1/2 cup, plus 2 T. butter, melted and divided
    1 dozen eggs, beaten
    Cheese Sauce (see ingredients below)
    1 - 4 oz can sliced mushrooms, drained (or 1 cup fresh sauteed)
    1-1/2 cups soft fresh breadcrumbs
    Paprika
    Cheese Sauce:
    2T. butter
    2-1/2 T. all-purpose flour
    2 cups milk
    1 cup (4 oz) shredded Cheddar Cheese
    1/2 t. salt
    1/4 t. pepper

    Make cheese sauce (below) and set aside for later. Saute Canadian bacon and onion in 3 T. butter in large skillet until onions are tender. Add beaten eggs to bacon/onion mixture and cook over med. heat stirring constantly, until just set. Remove from heat, stir in cheese sauce and mushrooms. Spoon into lightly greased 12X8X2-inch baking dish (or 9x12). Combine breadcrumbs and remaining 3T. butter; mix well, and distribute evenly over egg mixture. Sprinkle crumbs lightly with paprika; cover and chill for at least 8 hours or overnight.
    Remove from refrigerator; let stand for 30 min. Bake uncovered at 350 for 30 min. Makes 6 - 8 servings.

    Cheese Sauce:
    Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute. stirring constantly. Gradually add milk; cook over med. heat, stirring constantly, until thickened and bubbly. Add cheese, salt and pepper to taste, and stir until cheese melts. Makes 3 cups.

    Note: You can substitute regular bacon or ham or crumbled sausage for the Canadian bacon if you prefer, or omit any of the meat product. This is one of those recipes you can alter to your personal preferences. It's a great do-ahead dish for a holiday brunch or when you have company.
