    Pfeffernuesse cookies

    Source of Recipe

    Grandma Julia Lange

    Recipe Introduction

These are the hard little cookies Grandma Lange used to make before Christmas. The longer the sit, the better they are. Love to dunk them in coffee.

    List of Ingredients

    ½ C corn syrup 3 C sifted flour
    ½ C molasses ¼ tsp soda
    ¼ C butter ½ tsp allspice
    ½ C less 2 T brown sugar ½ tsp cinnamon
1 TBSP lemon juice 1/8 tsp pepper
1 tsp grated lemon rind 1 egg white

    Recipe

    Preheat oven to 325 degrees.
Warm corn syrup, molasses, butter, brown sugar, lemon juice and rind over low hear until butter and sugar melts. Remove from heat. Sift together dry ingredients and add using a bit more flour if needed to make dough easier to handle. Roll in ½ inch balls. Brush with slightly beaten egg whites for glaze. Bake and cool. Roll in powdered sugar. Store in screw type fruit jar for at least a month before serving. Reroll in powdered sugar for a heavier coating at serving time. Makes 5-6 dozen depending on size of balls you roll.

Too much flour makes cookies tough, so add sparingly if at all.
