    List of Ingredients


    • 8 large 1" pork chops, do not trim fat.
    • 3 - 4 large Spanish onions, slivered
    • salt & pepper
    • 1/2 pint heavy cream


    Instructions


    1. In a 15" skillet over high heat, brown chops on both sides in a little rendered pork fat (I used olive oil).
    2. Smother them with onions.
    3. Sprinkle on a little salt & pepper, cover the skillet securely, turn the heat very low, and cook for 2 1/2 hours without peeking.
    4. Uncover. Remove the chops to a heated, deep platter. Add heavy cream to onions and liquid in the pan, raise the heat, and boil until the mixture is reduced to a sauce like consistency.
    5. Season to taste with additional salt & pepper, pour over the chops, and serve with mashed potatoes.
