    • 1 cup mayonnaise
    • 1 T. Vinegar
    • 1 T. Prepared mustard
    • 1 1/2 tsp salt
    • 3 hard-cooked eggs
    • 7 cups diced cooked potatoes
    • 1 cup chopped celery
    • 1/4 cup sliced green onions
    • 2 oz jar chopped pimento, well drained, reserving 1 tsp
    • 3" green onion tops
    • 1 9 oz pkg Green Giant Harvest Fresh Frozen Baby Early peas


    Instructions


    1. I have made this in a bowl, not using the form. Line bottom and sides of 9 x 5 loaf pan with waxed paper.

    2. In large bowl, combine mayonnaise, vinegar, mustard and salt. j
    3. Slice 1 hard cooked egg horizontally to obtain 3 slices; set aside for garnish. Chop remaining eggs. Gently stir chopped eggs, potatoes, celery, sliced onions and pimiento into dressing mixture.
    4. To create garnish, place 3 reserved egg slices, green onion tops and reserved chopped pimiento in center of prepared pan. On top of garnish, layer 1/2 of potato salad mixture, peas and remaining potato salad mixture.
    5. Cover; refrigerate at least 4 hours. To serve, turn out onto platter or service tray.
