Artichoke Tidbits

List of Ingredients
- 2 jars marinated artichoke hearts
- 4 eggs
- 1/4 c fine bread crumbs
- pepper to taste
- dash of tabasco
- 2 1/2 c cheddar cheese, shredded
- 1 clove garlic, mashed
- 1 small onion, chopped
- 1/4 t salt
- pinch of oregano
- 2 T parsley
Instructions
- Drain 1 jar of artichokes and discard juice. Drain juice from the second jar into frying pan.
- Chop all artichokes (from both jars) and set aside. Can be chopped fine in a food processor.
- Add onion and garlic to frying pan and saute.
- Beat eggs in a bowl; add crumbs, salt, pepper, oregano, parsley and tabasco.
- Stir in cheese, artichokes and onion mixture.
- Turn into 9x9 greased pan.
- Bake at 325 degrees for 30 minutes.
- Let cool and cut into 1 inch squares. Can be frozen and reheated to serve.
