    List of Ingredients


    • 2 jars marinated artichoke hearts
    • 4 eggs
    • 1/4 c fine bread crumbs
    • pepper to taste
    • dash of tabasco
    • 2 1/2 c cheddar cheese, shredded
    • 1 clove garlic, mashed
    • 1 small onion, chopped
    • 1/4 t salt
    • pinch of oregano
    • 2 T parsley


    Instructions


    1. Drain 1 jar of artichokes and discard juice. Drain juice from the second jar into frying pan.
    2. Chop all artichokes (from both jars) and set aside. Can be chopped fine in a food processor.
    3. Add onion and garlic to frying pan and saute.
    4. Beat eggs in a bowl; add crumbs, salt, pepper, oregano, parsley and tabasco.
    5. Stir in cheese, artichokes and onion mixture.
    6. Turn into 9x9 greased pan.
    7. Bake at 325 degrees for 30 minutes.
    8. Let cool and cut into 1 inch squares. Can be frozen and reheated to serve.
