This recipes is a great change from the traditional cold potato salads.
List of Ingredients
7-8 Medium Potatos
1/2 Medium Onion Chopped
1 cup Mayonaise
1 lb Colby/Montery Cheese shredded
1 lb Bacon Cooked until crisp
Recipe
Place potatos (skins on) in a pot covered with water. Bring the potatoes to a boil and cook until almost tender.
Place potatos in cool water and remove skins and cut into medium size pieces.
Mix in a large bowl, onion, mayonaise and half of cheese. Add the potatos to the mix and toss well. Place the potato mixture in a covered casserole dish and cover with the remaining cheese and top with the bacon crumbled.
Bake in the oven on middle rack at 350 degrees for 40-45 minutes. Enjoy this picnic favorite.
